 PHY\n\nAbby Hitchcock grew up on Long Island’s rural East End\, known fo
 r its fishing and farming (fresh bay\nscallops\, stripers\, flounder\, blu
 efish\, farm-stands\, and pick-your-own strawberries/pumpkins/apples). Fro
 m her\nmother she learned to love simple fresh local foods and from her fa
 ther\, an amateur chef who enjoys preparing\nAmerican and ethnic feasts\, 
 a love of reading menus and preparing exotic fare.\nBut it wasn’t until 
 she attended university in England\, where she was placed in a "self-cater
 ing" flat (shop\, cook\nand feed yourself) that Abby found that food was h
 er passion: shopping for it\, cooking it\, eating it\, researching\nit. Ab
 by began poking about in the greengrocer’s and butcher’s shops and pre
 paring amazing repasts for her\nEnglish flat mates—a New York brunch or 
 an American Thanksgiving for 12— in her tiny kitchenette. After\nshe ear
 ned her degree in Botany\, she returned to the States and enrolled in Pete
 r Kump’s New York Cooking\nSchool (now The Institute of Culinary Educati
 on).\nWith her Peter Kump diploma in hand\, Abby went on to work at The Te
 a Box at Takashimaya in New York\,\nVong in London and at the BBC’s Vege
 tarian Good Food Magazine. She has been a private chef\, worked at\nMartha
  Stewart Living television and run her own catering company. She finally s
 ettled down as part owner\,\nthen sole owner\, of CAMAJE Bistro in Greenwi
 ch Village. It has been open since 1997\, something of a record\nin Manhat
 tan.\nIn addition to being its chef/owner\, Abby began a small cooking sch
 ool at CAMAJE in 2000. The classes offer\nthe unique experience of learnin
 g in a working restaurant kitchen. (If there’s a sudden rush\, students 
 stand\nback!) She also leads tours of various New York City neighborhoods
 —Chinatown Shop and Cook is a\nperennially sold-out favorite. In another
  popular cooking-class experience\, One Night Stand\, the student/chef\nwo
 rks with Abby to plan\, cook and serve family and friends a meal at the re
 staurant. Applause for the blushing\nchef!\nA certified sommelier\, Abby a
 lso conducts wine tastings\, in which wines are paired with complementary 
 foods.\nAbby hosts Dinners in the Dark—sensory feasts served to blindfol
 ded diners—twice a week. Featured in New\nYork and national media\, Dinn
 ers in the Dark feature Abby’s secret menus and other sensory “happeni
 ngs” and\nhave lured countless diners in search of an eating adventure. 
 Valentine’s Day events are always sold out.\nAbby was a contestant on Fo
 od Network’s Chopped! as well as several appearances as a judge on Beat 
 Bobby\nFlay.\nIn April 2019\, Abby rebranded CAMAJE as Abigail’s Kitchen
  with a focus on the popular cooking classes she\nloves to teach\, the Din
 ners in the Dark and private events. Prior to the pandemic\, the restauran
 t was open with a\npared down NY State-centric menu offering local cheese\
 , charcuterie and a raw bar. Events for now are all\n\nThis is a CLASS ONL
